EASY: Sweet and sour mint sauce for lamb

Here's a great, delicious, and dead easy mint sauce for lamb, adapted from Cook's Illustrated. It's so much better than mint jelly!:

Sweet and Sour Mint Sauce

0.5 cup fresh mint leaves, chopped
0.25 cup red wine vinegar
1 tablespoon sugar (or honey)
Salt to taste

Mix together mint, vinegar, and sugar, till sugar is dissolved.

Let sit for 20 min, minimum, stirring occasionally.

When ready to serve, add salt if you think it needs it, and/or maybe pepper.

Serve with lamb.

Oh, I've got the perfect mint plant for it too--it's got plans on taking over a swampy area near the road.
It was a dollar clearance bin special in a quart-sized pot last year. This year it's already spread over 6 feet.

I've got some other mint recipes that are good, too! One's a fruit salad with stone fruit, as I recall; another is bought tortellini with a yogurt/mint sauce and smoked paprika oil. Easy and good!

I've never even tasted a mint sauce. Do you have an easy recipe that makes a tiny amount? I'd love to try it and see if I like it or not.

Make the above, but use maybe half the amounts- that makes a pretty small amount. Te amount of mint is pretty flexible.
